I would like to see all the stats of the weapons in the shop because I don't want to have to go play the game and try to find out what all the stats are.

Stats here are not so important, really. Uses and accuracy don't vary, and power increases the lower the weapon is in the list.
That is, a Steel Sword will have the same uses and general stats as the Iron Sword. The only difference is that the Steel Sword does "more damage"(something that is quite relative, but whatever).

Let me remind you that the order of strength of weapons here is different than that of any FE game, though.
If you'd take a look at the sword list, for example, you'd see that the Light Brand is the last of the normal weapons. As such, it's stronger than even the Rune Sword, and only beaten by the S-ranked Regal Blade. If you were to look at the in-game stats of both Light Brand and Rune Sword, you'd see that the latter has 3 more points in attack. That doesn't quite work that way here, I'm afraid.
That's one of the reasons you can't really base combat around the statsheets on their own. Post count, class, weapon triangle and our own weapon list are what ultimately matters on a one-on-one duel.

They shouldn't be used for everything when roleplaying but it also sets your character's limits at the same time. Would it make since for a non combat type of person to have the abilty to push somebody twice their size around? Like Hiro just bodyslamming Kraft becuase the two get into a feud? No, he's a weak guy so it refelcts in his stats.
Then if the time comes and Hiro gets into a fight I'll have to base his combat on his stats and go from there. Will be be slaying a group of thugs to get away? Nope, will he tank his way past Kraft's gaurds? Never. Will Usha ever outspeed any of the smaller characters? Possibly but most of the time she'll have trouble.
But one thing Matis didn't say is that the stats do matter when it comes down to the whole one vs one. But it's just one of the factors.
In short they're a fun thing to do, not really cannon for everything. But this part is true of all times, it's your character's limitations. We're not going to see some Lycian just outspeed Matis like it was nothing. Matis and Kenshin both have found ways to even outrun a horse at full gallop, but Kenshin had to copy Matis to catch up.

Matis and Kenshin both have found ways to even outrun a horse at full gallop, but Kenshin had to copy Matis to catch up. I'd like to call Bull crap on being able to do that.

It's not canon, but it's required to do that you do it anyway. Yes, that makes perfect sense...

And as fast as those two can move why do we go slow? Maybe becuase it could put alot of strain on their bodies and they become fatuge quick. In a time where you're fighting almost all the time who wants to take that risk?
